Lassi is a favorite summer drink in India. It is a traditional yoghurt based beverage, which is served chilled, be it salty or sweet. Traditional lassi were not flavored, they were plain sweet or plain salty. Today, you can add various varied flavors to your lassi depending on individual tastes.

The most popular lassi flavors are sweet lassi and salty lassi flavored with mint leaves and jeera powder. Lassi is a traditional Indian beverage, originally from Punjab, made by blending yogurt with water, salt, and spices until frothy. Traditional lassi is sometimes flavored with ground-roasted cumin. The Lassi of the Punjab sometimes uses a little milk and is topped with a thin layer of malai, a clotted cream, also known as Devonshire cream. Lassis are enjoyed chilled as a hot-weather refreshment.

Plain sweet lassi recipe

Ingredients :

  • ½ cup Plain Yoghurt
  • 1½ tablespoons sugar
  • ½ cup ice water

Method:

  • Blend all ingredients in a blender on high speed until frothy. Serve immediately.

Plain salted lassi recipe

Ingredients :

  • ½ cup Plain Mountain High Yoghurt
  • ¼ teaspoon salt
  • ½ teaspoon ground cumin
  • ½ cup ice water

Method:

  • Blend all ingredients in a blender on high speed until frothy. Serve immediately.

Masala Lassi recipe

Ingredients :

  • 3 cups plain yoghurt
  • 1 cup cold water
  • 1 fresh green chilli, seeded and very finely chopped
  • ½ tsp ground cumin seeds
  • Salt and pepper to taste
  • Fresh cilantro (coriander) or mint leaves to decorate
  • Crushed ice to serve

Method:

  • Pour the yoghurt and water into a blender and blend for one minute.
  • Add in chilli, cumin, salt and pepper and blend together. Serve over crushed ice.
  • Garnish with a sprinkle of cumin powder and finely chopped coriander or mint.

Mint lassi recipe

Ingredients :

  • ½ cup Plain Mountain High Yoghurt
  • ¼ teaspoon salt
  • 2 sprigs fresh mint
  • ½ cup ice water

Method:

  • Blend all ingredients in a blender on high speed until frothy. Serve immediately.

Mango Lassi Recipe

Ingredients :

  • 1 cup plain yogurt
  • 1/2 cup mango pulp or pieces of mango(fresh or canned)
  • 1 cup crushed ice
  • 3 table spoons sugar / Use sugar substitute if desired

Method:

  • Blend all of the above.
  • Add a little water if the consistency is too thick.
  • Keep refrigerated. Serve chilled.
  • Garnish with a sprig of mint.

Strawberry lassi recipe

Ingredients :

  • 1 lb fresh strawberry, trimmed and halved (3 1/2 cups)
  • 1/2 cup sugar
  • 1/4 teaspoon ground cardamom, rounded
  • 1 pinch salt
  • 2 cups plain yogurt (whole milk or low-fat)
  • 1 cup ice cubes

Method:

  • Puree strawberries with sugar, cardamom, and a pinch of salt in a blend until smooth.
  • Add yogurt and ice, then puree until smooth again.

Banana lassi recipe

Ingredients :

  • 150 gm ice cube, crushed well
  • 150 ml ice water
  • 150 gm natural yoghurt
  • 2 very ripe banana, peeled and roughly chopped
  • 1-2 teaspoon honey (optional)
  • 1 pod crushed cardamom

Method:

  • Blend all of the above ingredients together in a blender.
  • Served chilled and garnish with a slice of banana.

Ingredients :

  • 2 cups fresh curds
  • 1/4 cup sugar
  • 1 tablespoon rose syrup (or more if desired)
  • 1/2 teaspoon salt
  • 1/2 teaspoon cardamom powder
  • 1/2 cup water
  • 10 -12 crushed ice cubes
  • 10 -12 drops vanilla essence

Method:

  • Put all the ingredients in a blender.
  • Blend until smooth and frothy.
  • Serve chilled in tall glasses.
  • Vary the flavour by substituting rose for pineapple.
  • Add very finely chopped pieces of fruit, if desired.

  • 1 lb fresh fruits of your choice (the combined weight of the fruits )
  • 1/2 cup sugar
  • 1/4 teaspoon ground cardamom, rounded

  • Thick Yogurt(chilled)-2 cups
  • Sugar-3-4 tsp
  • Saffron-1/4 tsp
  • Hot water-1 tbsp
  • Cardamom-a pinch

  • Mix saffron water with rest of the ingredients and serve immediately.
