Chhole Bhature - A Tangy and Tasty North Indian Delight

I guess everybody knows what Choole Bhature is (at least everybody in India Knows about Chhole Bhature). Well, if you don’t know then here is a brief introduction to “What is Chhole Bhature” followed by the recipe. Choley Bhature is a popular North Indian fast food. The dish seems to be originated in the state of Punjab and is known throughout the country for its delicious tangy taste. The dish actually can’t be categories under one category. It falls under Indian Fast food, Street Food, complete Food, Breakfast item etc.. The dish is usually accompanied by chilled lassi / Chhas / raita, Pickle, onion salad and mint chutney.

Chhole is the Spicy chickpea curry and Bhature is the deep fried bread made of maida.  Chhole Bhature is an absolutely decadent treat that is a must-try if you visit India.  It is one of the specialties and a good representative of Indian Cuisine.

Recipe No. 1
Ingredients:
  • 400 gms Maida
  • 2 tbsp Oil
  • 100 gms Curd
  • 2 tsp Baking powder
  • 400 gms Soaked Chana
  • 4 Chopped onions
  • 2 Garlic flakes
  • 1 Ginger
  • 1 tsp Garam masala
  • 1 tsp Red chilli powder
  • 1/2 tsp Mango powder
  • 1 tsp Pepper
  • 1 tsp Cinnamon powder
  • Oil for frying
  • Salt to taste

Method:
  • Mix maida, curd, oil and baking powder.
  • Prepare smooth dough and keep it in a muslin cloth overnight.
  • Grind ginger and garlic to make a paste.
  • Heat the oil and fry onions till it turns brown.
  • Add garam masala, red chilli powder, Cinnamon powder, ginger garlic paste & salt to it.
  • Fry it well.
  • Add soaked chana and water
  • Cook it till it turns thick.
  • Add pepper and mango powder.
  • Cook it for five minutes.
  • Chhole is ready.
  • Roll out thick puris from the dough.
  • Fry it till both the sides turns brown.
  • Serve hot.

Bhatura
Ingredients:
  • 2 cups maida or all purpose flour
  • 1/2 tsp. baking powder
  • 2 tbsp. cup yogurt
  • 1 tsp. sugar
  • 1 tbsp. Oil
  • Salt
  • Water as required
  • Oil for Frying.

Method:
  • Mix all the ingredient (except oil for frying) in a bowl and knead properly to from a soft and uniform a dough. Keep it aside for 8 to 10 hours.
  • Take a small ball of dough and rolled into a desired shape like chapatti.
  • Heat oil in a pan and deep fry Bhature in oil.

Chhole :
Ingredients:
  • 2 cups Chick peas
  • 2 Large Potato (diced)
  • 1 Large onion (grated)
  • 1 tbsp. Ginger-garlic paste
  • 2 Bay leaves.
  • 2 Cardamom
  • 2 cinnamon stick
  • 3 clove
  • 2 Whole red chili
  • 1 tsp. turmeric powder
  • 1 tsp. coriander powder.
  • 1 tsp. roasted cumin powder
  • 1 tsp. red chili powder
  • 1 tsp garam masala powder
  • 1/2 cup tomato puree
  • 1 tsp. Sugar
  • Salt
  • Oil
  • 1 tsp ghee
  • Coriander leaves

Method:
  • Soak Chick peas overnight in water and pressure cook along with the potato pieces adding little salt.
  • Take out the potato pieces and fry it until becomes golden brown. Keep it aside.
  • Heat 2 to 3 tbsp oil in a pan. Add bay leaves , red chili's, cinnamon, cardamom and cloves. Fry it for a minute and then add grated onion and ginger garlic paste. After a couple of minute add turmeric powder chili powder , cumin powder and coriander powder. Add little water and fry the masala until oil gets separated from it. Add cooked Channa (chick peas), fried Potato pieces salt, sugar and tomato puree. Stir well and cook for 6 to 8 minute with occasional stirring. Add garam masala powder and water for gravy. Cover it and let it cook until the gravy becomes thick. Take it out from fire and add 1 tsp of ghee.
  • Garnish with coriander leaves and thin sliced onion rings and slice of lemon and serve along with bhatura.

Bhature
Ingredients:
  • Refined flour 3 cups
  • Cooking oil 1 tbsp
  • Plain Yogurt 1/2 cup
  • Baking powder 1 tsp

Method:
  • Sieve together the refined flour and baking powder. Add ghee and yoghurt. Mix well using palms of your hands. Make a smooth dough using water as needed. Cover with a clean wet kitchen towel to keep it from drying and leave it to ferment overnight
  • Make small balls from the dough, roll into thick round chapati or tortilla like shapes. Deep fry in oil on both sides until golden brown. Serve with hot Punjabi chhole

Chhole Recipe
Ingredients:
  • Cooked (boiled) Chick Peas or Garbanzo beans
  • Garam masala 1/2 tsp
  • Garlic Paste 1 tsp
  • Ginger Paste 1 tsp
  • Chili powder 1/2 tsp
  • Dry Mango Powder 1 tsp
  • Dry Coriander powder 1 tsp
  • Finely Chopped Large Onion 1
  • Salt to taste
  • Cooking Oil
  • Chopped Coriander 1 tbsp

Method:
  • Heat oil in a pan, add onions, ginger garlic paste. Fry until golden brown. Add coriander powder and garam masala, and fry for 2 minutes.
  • Now add chickpeas, salt, chili powder, 1-cup water and cook until the gravy thickens. Later add mango powder, chopped coriander and cook for 2 minutes.. Serve hot with bhatura.
